RECIPE

Ingredients:

  • beets, peeled and thinly sliced–as many as you want!
  • olive oil
  • salt or mix of garlic, rosemary, thyme to taste
Directions I  (baked)
  1. Preheat oven to 350 degrees. Line a baking sheet with foil.
  2. Peel the beets and cut as thinly as possible. Toss in a bowl with olive oil and salt. Spread on baking sheet in a single layer.
  3. Bake in oven 15-20 min. Turn all slices over and continue to bake another 15-20 minutes..
  4. Sprinkle with salt and serve.
Directions II (fried)
  1. Peel the beets and cut as thinly as possible. Toss in a bowl with olive oil and salt. Spread on baking sheet in a single layer.
  2. Warm the oil.
  3. When the oil is hot add about a quarter of the sweet potato slices. Let fry until golden and the bubbling has almost completely subsided, about 2 to 3 minutes.
  4. Remove the chips to a paper-towel-lined baking sheet.
  5. Sprinkle with some of the garlic, rosemary, and salt mixture. Continue with the remaining sweet potatoes.
  6. Let cool and transfer to a serving plate.
