Chocolate Berries Cake

Ingredients for the cake:

  • 1 1/3 cup flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • pinch of salt
  • 130g butter, softened
  • 1 cup brown sugar
  • 2 eggs
  • 1 egg yolk
  • 100g dark chocolate, melted
  • 1/2 vanilla powder
  • 3/4 cup milk


  • 250 g mascarpone cheese
  • 1/3 cup cocoa powder
  • 1/3 cup powdered sugar
  • 240 ml heavy cream
  • 300g frozen or fresh berries
  • powdered sugar


  1. Butter two 18 cm cake pans and dust with extra coca powder.
  2. Mix flour, salt, bakind powder and cocoa powder in a bowl. Set aside.
  3. Whip butter and brown sugar in a large bowl until light and fluffy. Ad eggs, yolk, melted chocolate and vanilla and mix until smooth.
  4. Add flour mixture and milk. Divide batter between the prepared pans smoothing of the top with a spoon.
  5. Bake 25 min in 170 C or until a pick comes out clean.
  6. Whip mascarpone with cocoa powder and sugar until creamy.
  7. Add heavy cream and whip a while.
