RECIPE

Ingredients:

  • 1 avocado, diced
  • 2 kiwi fruit, diced
  • 1/2 cup fresh spinach
  • pinch of Himalayan salt
  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon lime juice

Directions:

  1. Combine avocado, kiwi fruit in a bowl. Toss with lime juice, salt, and olive oil.
  2. Pack into 2 ramekins or round glasses.
  3. Place ramekins face-down over a plate and tap with a knife or spoon to release the mixture.  Remove with care.
  4. Finish with fresh spinach leaves.
