Banana Bited Covered with Coconut Shavings

• 1 cup shredded, sweet coconut
• 2 very ripe large banana
• 1 cup whipped cream
• mint leaves

Directions:

1. Peel bananas and dip them in whipped cream and roll in the coconut.
2. Slice bananas into 1/2 inch slices.
3. Just before serving decorate each plate with a few whole mint leaves.
